Cooking SchoolWe have many wonderful cooking schools coming up the next few months. If you are looking for a unique vacation opportunity, this is definitely for you. Chef Chris will give hands on instruction and inside information from years of culinary training. He is wonderful with guests; making everyone feel at home like one of the family. Our cooking schools are lots of fun and very informative. We offer two day weekend cooking classes as well. You will work with Chef Chris to prepare the Saturday Evening Dinner. March is a busy month for upcoming cooking schools here at Blair House Inn. Every week we host a different hands-on cooking school for our guests. Some are already sold out. Some only have a few spots remaining. There is even room left for the very popular Barbeque Camp in April. That will go fast! March 3rd – 5th : Taste of New Orleans– Spend 3 days & 2 nights in the beautiful Texas Hill Country while learning a variety of New Orleans cooking skills. This class will focus on the two main cuisines in and around New Orleans – Creole and Cajun – and will deliciously reflect their mix of Spanish, African, and French heritages. You will learn to prepare dishes such as award winning Gumbo, Blackened Snapper, Cajun Barbequed Shrimp, Louisiana Brined Roasted Loin of Pork, King Cake and the classic Beignet.

The last thing you want to do is stress over money. Remember you don’t necessarily need to travel far from home for a wellness vacation. Depending on where you live and your goal, you may find a suitable wellness vacation destination in your own town or within an easy drive.

We wanted to take a moment to share some positive guest reviews for the Blair House Inn. August was one of our best months ever. Our BBQ Cooking School sold out and was a big success. Lots of anniversaries, honeymoons, and romantic getaways before the school year starts. Labor Day celebrations in Wimberley and the surrounding Texas hill country brought in tons of people. We are not a big fan of B&B’s however the Blair House is in a class of its own. What we disliked about our experience at other inn’s was just the opposite at the Blair House. The property and rooms are maintained as though they are brand new. Service is superb. The inn keepers engage with their guests professionally and are not overbearing knowing when it is time to rest a conversation . My wife and I enjoyed our second stay at Wimberley’s Blair House early August to help celebrate my wife’s birthday. Our first visit was about twenty years earlier, but Blair House has only gotten better – more rooms and services (like massages).
The location is great for exploring Wimberley’s and the surrounding Hill Country area. Rooms, beds and shared areas are great and the food is outstanding! The site is terrific with beautiful grounds complete with hummingbirds and country setting. Lawrence J., Rowlett

My wife enjoyed our 50th Anniversary at Blair House and we totally enjoyed ourselves. I can safely say without any reservations that Blair House rates among the top two in inns for us. We have stayed at Blair House in the past and really enjoyed it; and plan to revisit maybe in the Dec ’13 to Jan ’14 time-frame when the weather is a little crisp and then we can enjoy their winter hospitality. Summer is winding down here in the Texas hill country. The Blair House Inn bed and breakfast is down to the final summer cooking schools. Our classes have been a big success this season and we want to finish up with a bang. Wimberley, TX weather has been pretty hot this year. Learn to prepare locally produced foods with an emphasis on freshness, seasonality, local availability, and simple preparation such as Texas Pecan and Bourbon Pie or a Handmade Artisan Goat Cheese and Fresh Mint Salad.

French Cuisine Cooking School: Blair House Inn

French Cuisine cooking schoolBlair House Inn’s recent Classic French cooking school was a complete success. A class of 7 put together some exceptional dishes and had a ball in the kitchen. Chef Chris started Monday by having students prepare Cognac Shrimp, Steak au Poivre, and Dauphinoise Potatoes with homemade bread. Lemon Curd Crepes rounded out the first meal of the week. A good start to an exciting three days of French Cuisine.

Everyone was excited to get a running start Tuesday morning despite the rain pouring outside. The smells drifting out of the kitchen had mouths watering all day. Herbs and Goat Cheese Fritattas got breakfast off to a wonderful start. Served with Tomato Basil Sauce and Rosemary Lavender Potatoes on the side. Pear Clafouti with Crème Fraiche rounded out a hearty breakfast.

The students needed the extra energy to push through a full day of cooking. Laughs filled the kitchen all afternoon while students prepared French Onion Soup, Cog au Vin, Lemongrass and Garlic Rice, and vegetables drizzled with compound butter (the heart and soul of French Cuisine). Chocolate Walnut Pot de Crème for dessert was to die for. The running joke was students forgetting whether they added sugar to recipes or adding salt instead of sugar. The little things that make new recipes and good friends so much fun. Everything worked out in the end with a few extra plates just to make sure. Tuesday dinner featured some true highlights of French Cuisine. Beef Bourguignon, Duck a la Orange with a side of braised greens and a fresh baguette. There was just enough room left for a Crème Caramel for dessert. Full bellies and empty glasses made for a relaxing evening listening to the rain in the trees.

Wednesday cooking school served Eggs Florentine with Hollandaise Sauce and homemade Brioche to soak up all the Hollandaise goodness. After preparing a lunch of Charcuterie Sandwiches on homemade Rosemary Cheese flatbread and fresh Mayonnaise the class packed everything up for a field trip to Bella Vista Ranch. Bella Vista is a local olive oil producer set on a beautiful vineyard in the Texas hill country. Everyone came back full and happy. A great end to a eventful cooking school.

This was one of our best groups of cooking schools guests. The kitchen was full of laughter and mouthwatering smells. Speaking as someone who sits in the office ten feet from the kitchen, the smell was overwhelming. Blair House Inn offers so many opportunities to come learn world class cooking techniques. Cooking with Fresh Herbs in the Texas Hill Country

Fresh herbs can add an abundance of flavor to any dish.  Utilizing the freshness will give any dish an impact that no dried herb can emulate.  At the Blair House we grow them all summer long, picking off what we need for our dishes, making pesto, and preserving them for use during the winter.

When working with fresh herbs, some people get stuck on how exactly to go about using them.  In our Cooking with Fresh Herbs class we will address multiple techniques on utilizing a wide range of herbs.  We will address how to plant and maintain your own garden in the region you live in.

Here are a few techniques for chopping herbs to add to your dishes, as well as how you can save any extra herbs for use later on. happy mother´s day

Washing Herbs – Herbs are plants, and like most plants, they are exposed to nature.  We will show you how to properly harvest, wash, and dry to ensure a healthy practice with cooking.

Removing Stems – When working with herbs such as parsley, dill, and sage, removing the main stem or stalk is the most important part.  For rosemary, thyme, and herbs with a woody stalk you will want to strip the leaves at their base to avoid any bitterness.  You will learn  how to determine what process to use with which herbs.

Chopping Herbs – Each herbs have different methods of chopping to utilize the most impact of flavor and presentation for your dishes.

Preserving & Drying – Extra chopped herbs can easily be preserved by freezing in ice cube trays, covering with a teaspoon of water and frozen.  Frozen herb-sickles can be added to soups or dishes as they are heating for a fresh burst of flavor in winter months.  Drying herbs at the end of the growing season can be utilized for months after summer has passed.

Texas Hill Country Bed and Breakfast Recognized in the National News

Hotel F&B magazine was intrigued with the custom designed executive teambuilding retreats offered to large and small companies.  “The biggest thing for us is it creates a point of difference from other operations, especially around Texas,” quoted by owner Vickie Schneider.  By taking executives out of the office setting that can be tense and stressful, and placing them in a kitchen with everyone having a common goal, helps to create a bond and team spirit that will continue when returning to the working environment.   Retreats can be coordinated by group interest with over a dozen menus to choose from.  Two, three, and five course meals that can include both lunch and dinner sessions will provide students with recipes and knowledge to create and execute in their kitchens at home.  “When, [executives] come here, it’s to create a bonding situation they feel is not present at their company,” says Michael.  “But that bonding does happen while working together in a kitchen, because everyone is contributing toward one goal.”  This is an equation and solution to building last bonds and relationships between coworkers.
