Last Meal of the TitanicBlair House Inn will be hosting a very special event for this year’s Halloween Dinner, Last Meal of the Titanic. Chef Chris Huffman has set a menu to highlight some of the fine dining available to passage of the fateful voyage. Since our Saturday evening dinner falls on Halloween this year, we decided to take advantage. Dining aboard the Titanic ranged from lavish ten course extravaganzas designed to put the well-to-do passengers in a food coma, to simple, hearty meals for lower deck travelers. The food and drink flowed freely for passengers on the maiden voyage of the doomed ship with no end in sight. Everyone knows the ultimate fate of Titanic after an iceberg collision. What most don’t know is the extravagance of the wealthy on board.  At the modern day equivalent of $124,000 for a first class ticket, passages expected the best and received the best. Join us for this weekend for a unique dinner and good company. Rooms are still available as well as space for those guests wanting to join us only for dinner on Saturday night. Our Halloween Dinner, Last Meal of the Titanic is not to be missed. We promise the restaurant will not sink.

Blair House Inn is ready to present the 2016 cooking school schedule. Next year will be full of great eats in the Texas hill country. Chef Chris Huffman has returned to the kitchen and is ready to work hands on with cooking school guests to teach the best techniques and delicious recipes.

Do you want to learn how to prepare a classic Italian or French meal for friends and relatives? We have got you covered. Want to blow away everyone with mouthwatering BBQ? Summer BBQ camp will turn you into a grill master. Don’t forget about the Holiday class at the end of the year. Spend some time learning to make the perfect holiday meal with us. The 2016 cooking school schedule also features a new class: Spanish Cuisine. Learn the rich history of Spanish influence on world cuisine. Chef Chris has put together an excellent selection of dishes to highlight the flavors and variety of ingredients used in Spanish style cooking.

January 11-13: Classic French – Learn the art of haute cuisine. Create exciting fare such as Shrimp Scampi, French Onion Soup, Coq au Vin, Steak au Poivre, and Beef Bourguignon. Learn the art of roasting canard (duck) served with an orange sauce. Prepare delectable desserts like Chocolate Torte with Raspberry Coulis and Crème Caramel. Chef Chris will teach you basic French techniques that you can apply to all of your home cooking.

February 1-3: Taste of New Orleans – Spend 3 days & 2 nights in the beautiful Texas Hill Country while learning a variety of New Orleans cooking skills. This class will focus on the two main cuisines in and around New Orleans – Creole and Cajun – and will deliciously reflect their mix of Spanish, African, and French heritages. You will learn to prepare dishes such as award winning Gumbo, Blackened Snapper, Cajun Barbequed Shrimp, Louisiana Brined Roasted Loin of Pork, King Cake and the classic Beignet.

February 15-17: Country French – Chef Chris will teach you basic French techniques that you can apply to all of your home cooking. In the process, learn how to make dishes like Steak Diane, Poulet Wellington, Raspberry Tarts, and Chocolate Crème Bruleé. Plus Sauces Francais 101! Never again feel like recipes are written in a foreign language!

March 7-9: Italian Cuisine – Come enjoy the taste of Italy as you prepare classic dishes such as Osso Buco Milanese, Roasted Red Pepper Risotto with Pine Nuts, and Italian Espresso Tiramisu. You’ll learn traditional Italian sauces such as Fresh Basil Marinara, and Roasted Garlic Alfredo, and how to make the fresh pasta and potato gnocchi.

March 21-23: BBQ Camp – Summer in Texas means BBQ. You’ll be the envy of your friends and family once you learn the secrets to preparing wonderful meals on the grill. Try your hand at Cedar Planked Wild King Salmon with Jerk Spice and Mango Salsa, St. Louis Style Baby Back Ribs with Cherry Coke Glaze, Chicken Fajitas, Texas Brisket, and Fredericksburg Peach Cobbler with Home-made Vanilla Bean Ice Cream.

April 4-6: Mediterranean Cuisine – If you can’t make it to the Mediterranean this summer, let Blair House take you on a culinary tour of the region from the Strait of Gibraltar to Cypress with plenty of tasty stops along the way! You will prepare Risotto, Hummus Pita Bread, Pasta, Fruits de Mer, Calamari, Baklava, Classic Greek Salad, Focaccia, Polenta and Crema Catalana. These are just a sampling of what you have to look forward to on your journey.

April 18-20: Spanish Cuisine – New for 2016, this class will teach the technique and history of Spanish cuisine. Traditional favorites like paella and arroz con pollo will serve as a backbone for the flavors that make up Spanish style cooking. Enjoy potato and chorizo trinxat, tortilla espanola, salmorejo, and a traditional favorite- cocido, a stew made with chicken, pork, chick peas, vegetables, and smoked paprika. Make this holiday traditional, but with a twist!

Chef Chris HuffmanBlair House Inn is thrilled to welcome back chef Chris Huffman. Chef Huffman helped elevate the cuisine and improve the cooking schools at Blair House. He is sure to bring some new energy into the kitchen. We are in the process of creating the new cooking school schedule and Chris has some great ideas for next year. His insight into teaching cooking schools is an invaluable benefit for anyone wanting to learn some new recipes or just wanting improve their skills. The schools are a hands on approach to cooking and a history lesson into the origin of the food being prepared. Chef Chris Huffman runs a well rounded school to make anyone a hit at their next dinner party.

Chris was born and raised in Longview, Texas. He attended the Culinary Academy of Austin, presently known as the Auguste Escoffier School of Culinary Arts. After graduation, Chris was employed by the popular South Congress restaurant Mars. From there, he worked his way up to become sous chef of Jeffrey’s Restaurant & Bar, working with many talented chefs. An Austin landmark for more than four decades, Jeffrey’s has been the restaurant of choice for presidents, governors, celebrities, and rock stars. After relocating to the Hill Country Chris opened the Goodnight Diner in Dripping Springs, where he and his wife Jana, a pastry chef, served up “comfort by the plateful”. After Chris and Jana decided to start a family, Chris accepted the position as Executive Chef and Instructor at the Blair House Inn. Chris moved over to The Mercantile last year to help a friend get his restaurant up and running. The mercantile is a tasty little tapas bar with hand picked selection of wine from the region. Having handing off the reigns in the kitchen to a fellow chef, Chris decided to come back to Blair House with the new owners, Chris and Lois Mahoney. We have really put together a wonderful group of people at the Blair House Inn. Come have fun with us. Welcome back Chef Chris Huffman!

Wimberley Alive Music and Arts Festival

Wimberley Alive Music and Arts FestivalMake a trip to Blair House Inn to enjoy the first ever three day Wimberley Alive Music and Arts Festival. Celebrating Wimberleys strong spirit and benefiting Barnabas Connection for Wimberley flood relief. The town will be filled with music and events to invite people back after the recent flooding. Plenty of chances to grab a snack at the festival or head into one of Wimberley’s favorite restaurants. Five music stages will be put up featuring artists Andrew Hardin, Kelley Mickwee,
Shake Russell, Michael Hearne, and Bruce Robison. Two artist villages with artists coming from Santa Fe, Washington State, and many Wimberley regional artists will be here too! Fourteen galleries in Wimberley will have art demonstrations going on for all the artists at heart. Please make the trip out to Wimberley to support our local businesses and take part in an event that is sure to grow every year.

The Lumberyard center in the town square is hosting a Wimberley Relief Event Saturday, July 11 from 12-4pm benefiting families and residents still cleaning up from the floods. Wimberley business is up and running trying to help residents get things back to normal. All visitors to Wimberley should know the town is ready and welcoming to anyone ready to visit. Except for some brush piles and broken homes, everything is 100%.  So come join us this weekend for some fun. There will be live music, beer and wine, and plenty of food to eat. Maybe you will win the washer tournament or find a new pet at the Wag Rescue booth. For a $20 recommended donation, you can help Wimberley residents and have a great afternoon listening to music and enjoying local food. Don’t miss out on any of the other Wimberley events this weekend. There is definitely something for everyone.

Chris and Lois made our three day stay quite enjoyable. We stayed in the Laredo suite. Very comfortable bed, spa type bathroom and awesome views. Breakfast was like a box of chocolates. Never knew what you were going to get but always a treat. Highly recommend Blair House Inn.

We were looking for a quiet place to unwind and enjoy being together after our wedding, and we chose the Blair House for our mini-getaway. We stayed two nights in the San Miguel cottage, and I couldn’t have asked for a better retreat. The bed was so luxurious, it was hard to stay out of (not a problem for us!), but we did manage to get out a bit for a massage (divine!!), a walk around the property (beautiful surroundings!!), and a swim in the pool and hot tub (beautiful views!!). The breakfasts were delicious, and the dessert and drinks in the evening were a beautiful touch… I don’t drink, and when I informed them of this when they called pre-stay to inquire about what we wanted and asked for sparkling cider instead of wine with dessert, they were happy to oblige my request. It was so hard to leave this place! The ultimate sanctuary for a romantic getaway!! Looking forward to another stay in the future!!

We signed up for the cooking classes and were not disappointed. Brian is a world class chef, and besides showing us how to make excellent barberque, ribs, steaks, brisket, he also gave us a refesher in baking methods that were much more efficient than anything we had learned. We baked homade breads, pies, beignets, tarts, etc and they were outstanding, He also gave us a course on smoking meats including salmon and chicken. Truly an outstanding program at an outstanding facility. We look forward to our next trip in November.

This specialty treatment now offered at the Blair House Inn Day Spa utilizing Young Living Essential Oils.

Raindrop TechniqueThis 60 minute treatment uses Young Living Oils, a combination of eight essential oils, Valor, Thyme, Oregano, Basil, Wintergreen, Cypress, Marjoram, and Peppermint are placed along the spine.

The Raindrop Technique is a method of using reflexology and massage techniques and essential oils to bring the body into structural and electrical alignment. It is designed to bring balance to the body with its relaxing and mild application. The oils are dispensed like little drops of rain above the back and massaged along the vertebrae.
